Well, some of these would could certainly make any list (Akira, Evangelion, Ghost in the Shell, Totoro), but here are a few more off the top of my head:
- Cowboy Bebop (this show has massive impact and just happens to be one of the best creations in any media; it makes you laugh, it makes you cry, it makes you think, and it is a true visual and musical accomplishment with a style that is uniquely its own)
- Great Teacher Onizuka (other than being brilliant and hilarious, it is also pretty powerful commentary on the Japanese school system)
- Gurren Lagann (this mecha show is about a lot more than strange looking giant robots... Its bizarre over-the-top story is like nothing else and its emotional impact is quite surprising. The things you will see by the end are difficult to describe and should not be spoiled)
- Death Note (other than being great and thought-provoking, the cultural influence of that show is massive, especially in Japan)
- Initial D (this show is very good on its own, but also it has actually changed many a car guys' lives around the world)
- Ghost in the Shell: Stand Alone Complex (this show is a great sci-fi cop show, but also contains some hugely interesting ideas about future and present society)
- Princess Mononoke (this concludes Miyazaki's environmental ideas started in Nausicaa; also happens to be a much better film as Nausicaa really hasn't aged well at all).
- Future Boy Conan (The pinnacle of Miyazaki's career, created in 1978... pretty much everything he made later, other than Totoro and Spirited Away, was like FBC, but not quite as good)
And if you want to go a bit less mainstream:
- Mind Game (this film is kind of about the meaning a life, but also so much more... very difficult to describe, you just have to watch it)
- Planetes (the anime is awesome, the original manga even more so - a very touching story about the world in the near future and what goes through an astronaut's head)
- Legend of the Galactic Heroes (the political ideas about monarchy and democracy here are truly interesting and will make you think)
There's more, but this list is getting a bit long, so I'll stop.
